Managing dietary requirements across 100, 200 or 500 delegates is a logistical challenge that many conference caterers handle poorly. Requirements get lost, options are mislabelled, and delegates with serious allergies end up with nothing to eat. This is not acceptable at a professional conference, and it is not something we allow to happen.
Our process for large-scale dietary management is thorough. We ask conference organisers to provide a consolidated dietary requirements list at least 72 hours before the event. Every item is labelled clearly at every service point. Cross-contamination protocols are followed throughout preparation. Dietary guests receive a full selection of appropriate options, not a single isolated item on a separate tray.
